Cous Cous Salsa Salad

Feeds 8 or more as part of a bbq.

400g Cous Cous
Enough good chicken stock to cover cous cous by 1cm
Leave for 10 mins before fluffing it up with a fork
Allow to cool and fluff up again.

Add 8+ nice cherry tomatoes diced, a more thick skinned, less wet variety works well such as mini plum tomoatoes
A cucumber (skin and seeds removed) diced
A couple of small red onions, finely diced
A bunch of correander, finely chopped

Dress well with the juice of 4 limes, a good pinch of sea salt, pepper and loads of good quality olive oil.
