Oyster Mushroom Quiche

1 disk pie dough
8 oz blue oyster mushrooms, sliced
1 bunch chives, chopped
4 sprigs parsley, chopped
2 cups spinach
1/3 cup goat cheese
6 eggs
1 1/4 cup cream
1 tsp salt
1/4 tsp black pepper


Step 01 – Preheat oven to 375°F. Line a 9-inch pie plate with dough. Prick the bottom with a fork and line with aluminum foil. Bake for 30-35 minutes, until crust is lightly browned and fully baked.

Step 02 – Meanwhile, sauté mushrooms in butter, salt, and pepper. Cook 5 minutes on medium heat, until tender.

Step 03 – Add eggs, cream, salt, and pepper to a mixing bowl. Whisk until smooth.

Step 04 – Build the quiche: add spinach to baked crust with herbs, mushrooms, and cheese. Pour filling over top.

Step 05 – Bake the quiche for 50-60 minutes, until set and no longer jiggly in the center. Cool 20 minutes before slicing.
