Grind:
- 500g pork (at least 20% fat)
- 250 grams shrimp, peeled and deveined

- 1 tablespoon freshly grated ginger
- 2 tablespoons soy sauce
- 2 tablespoons Shaoxing wine (or dry sherry)
- 1 teaspoon salt
- 1/4 teaspoon pepper
Just before making dumplings, mix with
- 450g shredded napa cabbage
- 4 spring onions, finely chopped
- 2 tablespoons sesame oil
