Perfect Crackling from Pig Skin

This is the ‘after’ photo; about 40cm x 30cm of pure crackling heaven.

This is probably the easiest thing you will ever make.

All you need to do is get yourself some pork skin (costs about £3 per kilo), coat in some sunflower oil and douse in good quality salt (the oil is so the salt sticks).

You can then cut it into strips or leave it whole for an impressive centre piece.

Cook on a medium to high oven (too high and it will burn, perhaps 200 or so but keep an eye on it) for 20 to 30 minutes.

IMPORTANT: Make sure you cook it on a raised wire rack so that the heat can circulate. Also have a tray big enough below that all the rendered fat can collect – if you don’t do this the fat will just end up on the oven floor and that can be dangerous as can catch fire.

You can keep the rendered fat if you like for potatoes and other treats.

Always cook it on the day that you will eat it, the next day it will be a bit soggy.
