Pickled Onions

Put 1kg small pickling onions in a Kilner jar
Toss in 200g cooking salt and leave for 8 hours
Bring the following ingredients to the boil and then leave for 8 hours;
  • 600ml white or pickling vinegar
  • 50g honey
  • 100g light brown sugar
  • 15g fresh root ginger, bruised but added whole
  • 2 tsp. yellow mustard seeds
  • 1 tsp. black peppercorns
  • 1 cinnamon stick
  • 1/2 tsp. dried chilli flakes – I used 1 tsp. of dried and crushed birds eyes (with seeds) and it was way too hot.
Thoroughly wash off the onions and the jar and re-combine the two.
Add 2 bay leaves, Pour over the steeped liquid
Leave for at least 2 weeks.
