Fried Rice #1

For 2 people

This is quite mild so goes great as an accompaniment, double up the final marinade for a stronger rice.

Add a tablespoon of sesame oil and a tablespoon of sunflower oil

Add 3 eggs to a hot wok and stir fry until just cooked

Add 600g (4 good handfulls) of cooked and cooled rice, cook, stirring, for about 5 minutes

Add 1 tbsp each of; Sweet soy, light soy, oyster sauce, another tea spoon of sesame oil, 1 tsp of sugar and some salt and pepper to the rice and cook for a minute or so until homogenised

Sprinkle on a sliced fresh chilli, some chopped corriander and juice from half a lime, toss and serve
