Basic Mayonnaise

  1. 2 egg yolks
  2. A good cooks pinch of salt
  3. Heaped teaspoon of English mustard powder
  4. White pepper (so it doesnt look like dead flies)
  5. A teaspoon of white wine vinegar
  6. Now start to add 250 ml groundut, sunflower or other flavourless oil (Olive oil is much too strong) added dropwise
  7. Once complete, add more white wine vinegar to taste
  8. If needed, add a bit of water at the end to improve the consistency (it can be too thick especially if made with an electric whisk)
