I use a 1/4 cup spoon for each pancake onto a pan on a medium heat, dont be inpatient and put it up too high or they will burn. Just about a minute on the first side until you see bubbles forming on the top and then flip carefully so the uncooked top doesnt fly everywhere, then about 30 seconds on side 2.
Put a saucepan with some water on to simmer, cover with a plate and layer pancakes and sheets of greaseproof paper on top of it to keep warm while you are cooking.
Add and mix;
250ml of milk
60g melted butter
Then add the rest of the ingredients bit by bit until smooth;
1.5 cups of plain flour (about 200g)
1 tsp of baking powder
1 tsp of bicarbonate of soda
2 tbsp of caster sugar
Leave to rest for 10 minutes and then cook as above.
