Serves 2 hungry people….
Marinade 2 chopped chicken breast in 1/4 cup soy sauce, 1/4 cup rice vinegar and 1/8 cup sugar for 2 hours.
Dredge in a thick batter made from 1/2 cups rice flour, 1/2 cups cornstarch and 1/3 cup fizzy water.
Drop piece by piece into hot oil (160C is fine) making sure that they dont stick to anything, especially each other, and deep fry for 5 mins plus until properly brown and crispy. Remove and set aside.
Toss the chicken in a bowl with a spice mix made up of 2 Tbsp. sugar, 1 tsp salt and 1 Tbsp. of shattered Szechuan peppercorns (add some chilli flakes too if you want some more heat).
Heat a pan with a little oil, add 4 spring onions then put the chicken back in the pan and toss everything together for a couple of minutes.
Finally, serve on a plate and throw on a handful of chopped coriander.
