Mango Habanero Salsa

Sweat 2 large carrots, 2 sticks of celery and a large onion until soft.

Next add 6 chopped and seeded scotch bonnet peppers, half a cup of cider vinegar, 3 tablespoons of caster sugar, 3 tins of mango puree and juice of 1 lime.

Blend with a stick blender and remove from the heat.

This will make 6 normal size jam jars.
