Pork Kebab Marinades

Souvlaki – Mix together juice of 1 lemon, 1/4 cup olive oil, 1/4 cup soy sauce, 1 tsp oregano, and 3 cloves of garlic. Add pork to bowl with 2 white onions cut into chunks and 2 cut up green peppers, and stir to coat. 

Miso – 6 Tbsp. miso (3 red and 3 white or whatever you have), 2 tsp ginger, 2 Tbsp. sake or sweet sherry, 1 Tbsp. sugar.

Satay –  

Thai Satay – 1/4 cup crunchy peanut butter, 1/4 cup finely chopped green onions, 2 tablespoons soy sauce, 

Sweet Maple – 2 tablespoons Dijon mustard, 1 teaspoon sesame oil, 3 cloves garlic, minced, fresh ground black pepper to taste, 1 cup maple syrup, 750g pork tenderloin.

Pork – 1/4 cup soy sauce, 1/4 cup packed brown sugar, 2 tablespoons sherry, 1 1/2 teaspoons dried minced onion, 1 teaspoon ground cinnamon, 2 tablespoons olive oil, 1 pinch garlic powder, 750g pork tenderloins.

Fiery Teriyaki – 

Garlic Herb – 3 pounds pork tenderloin, 1/4 cup olive oil, 3 cloves garlic, chopped, 1/2 teaspoon chopped fresh thyme, 1/2 tablespoon chopped fresh rosemary, 1 tablespoon salt, 2 tablespoons ground black pepper.

Chinese Oyster Sauce – 660g pork tenderloin.

Tandoori – 3cm piece of ginger, 2 cloves of garlic, 140 g natural yoghurt, 2 tablespoons olive oil, 60 ml tomato passata, ½ tsp garam masala, ½ teaspoon chilli powder, ½ teaspoon smoked paprika, ½ teaspoon turmeric, 10-12 skinless, boneless free-range chicken thighs.
